A common kitchen herb from the sunflower family, often used for flavouring chicken, fish and eggs: it's one of the four 'fines herbes' in French cuisine. Fresh sprigs of Tarragon can be steeped in vinegar to produce tarragon vinegar. The glossy-green lance-shaped leaves have a peppery taste and grow on slender branched stems. French Tarragon seldom flowers or seeds.
